Topic 1:
Teamwork- it is the process of working collaboratively with a group of people in order to achieve a goal. Coming together is a beginning, keeping together is a process, and working together is a success.
Managing the kitchen brigade and developing teamwork involves the following key areas:
Planning- Planning is to line out (determine) a course of action under a given set of situation (circumstances), for achieving pre-established objectives
Communicating
Organising-Communicating and organizing as operational procedures means allocating works to various teams and individuals in the kitchen and providing them with the right materials (equipment and supplies) to do their jobs
Coordinating-Coordinating ensures harmony within the kitchen team and greater cooperation with other departments of the hotel.
Delegating-Delegating involve trusting, because some of the chefs may fear to delegate, but in reality, both chef and staff work better when each concentrates on what each does best.
Classification of equipment
Large equipment: Fixed items like stove, ovens, fridge, salamanders and steamers.
Mechanical equipment: Can be large or small; electrically operated or engineered to be labour saving. Example: Mixer, slicer, microwaves, chopper and hot box.
Utensils and small equipment: Small hand operated pieces of equipment. Such as spoon, Knifes, etc.
Mise en place-everything in its place; if the chefs are confident that everything required for the day are in place and ready to use (including equipment, food stuffs and serving dishes), they can concentrate all their efforts on producing quality products with maximum efficiency and minimal stress and are more likely to maintain a smooth and even workflow through the day.

Food Hygiene and hygiene procedures
Food poisoning: A concerned with food being contaminate (致汙染) by harmful microorganisms that are described as pathogenic (引起疾病的).
Food spoilage: A concerned with good that has deteriorated

    Cooks are also very competitive and are extreme perfectionists. In a large, full-scale kitchen, there are many stations in which a cook could specialize. Sometimes more than forty cooks in a single restaurant compete for the best positions. A garde-manger is the lowest position while hot appetizers and pasta and risotto stations are of higher levels. The most wanted stations are the positions at the fish, meat and grill lines, where the main courses are prepared (Hesser, 3). Mr. Patel, owner of Zarole in Ridgewood, New Jersey, tells of his experience in an internship in France through John Foy's article, "What Stirred Young Chefs to Excel." "One day the chef had me in the freezer for two hours forming 200 scoops of ice cream into egg shapes. He didn't like one of the shapes, so he destroyed all of them and made me start over" (Foy, 3). The perfection that cooks must reach brings more pressure to their world of cooking. Cooks have to be organized and efficient, very well networked, and very patient. Amanda Hesser writes about this in her article, "So You Think Your Kitchen Is Small?" To be organized and efficient means to have decreased the amounts of extra equipment using only what is a necessity, streamlining their foods, and learning to take very efficient approaches to cooking (Hesser, 2).     I went to court in December to hear the trial of Cidney Ingram who was being charged with premeditated murder. The trial was being held in Judge Cynthia Lane's courtroom. I knew there were probably going to be a lot of people in the courtroom watching this trial, so I got there thirty minutes early to get a good seat in the front row. When I entered the courtroom, there were only a couple of other people there besides me waiting to watch the trial. I also saw the prosecutor and defense attorney setting up their laptops and gathering together their paperwork for the case. I saw the defendant, Cidney Ingram, sitting down besides his defense attorney. I also noticed the bailiff who was just standing alongside the wall in the courtroom. After about ten minutes, a man wearing a suit and tie entered into the courtroom and took a seat right behind me. The prosecutor then proceeded to sit down next to the man. Although I couldn’t hear exactly what they were saying, I assumed that the prosecutor was going over the case with the witness. People began coming in and the courtroom was starting to get crowded. I happened to notice a man that entered the courtroom who was wearing a hat, and I looked over at the Bailiff to see if he was going to say anything to this man.
