Bandeja Paisa History
The “bandeja paisa” is named after a community of people indigenous of the Andes regions known as “Paisas” or “Antioqueños”. It is also known by other names such as bandeja montañera, bandeja arriero, or bandeja antioqueña. The word “bandeja” means “platter or tray” and thus the dish can literally translate to “Paisa platter”. The dish was created at a time where Colombia was colonized and the people from Medellin or “Paisas” were employed as field workers and animal herders and their job required them to travel long and tiresome journeys to transport different supplies. In order to prepare their bodies for this laborious trips through the mountains, they would consume this extremely high calorie meal as it would provide them with enough energy

    Throughout the semester our class has been opened up to experiencing the Vancouver Bhangra Community. Bhangra is a folk dance that originated in Punjab but started in Vancouver during the 1970’s and usually was performed with half guys and half girls, however the girls were Caucasian. Also, in Vancouver around the same time when there were labor rights strikes the Dhol become really popular because it was used in the strikes to receive fair wages. The 70’s and 80’s were when the Bhangra scene in Vancouver was blossoming and creating an identity for itself; However, it was a male dominated dance form with very little involvement from females. Even in the 90’s female Bhangra dancers were only on coed teams until the first all girls team in Vancouver, the UBC Girls Bhangra team in 2002. After hearing experiences from the UBC Girls team it was clear to see the change in the overall involvement of girls in the Bhangra competitive area. At first the UBC girls were not seen as equal to the male teams because Bhangra was considered a male dance form and even judges would tell them that they were not as the same level as the males because there were girls and could not perform in a manly enough way. They were also told it was inappropriate for girls to dance in such a manner but the UBC girls didn’t let that stop them. They continued on to dance regardless of the criticism they were getting and actually went on to win many first places, even at Vancouver International Bhangra in 2005, 2006 &2007. The culture behind Bhangra is one of a conservative nature and any change usually takes a while but as we can see after the UBC girls more and more girls are freely joining Bhangra teams and even competing. The negative stigma that was behind girls in Bhangra is slowly going away to make it a more accepting dance form for males and females.…

    He said, smiling, “my favorite foods were big mac, KFC chicken, and french fries.” In Morelia, they did not have french fries, Cheetos, and soda. The foods in Morelia were home cooked and freshly grown from his garden; such as, beans, corn, and vegetables.     We will start with the basics. This is no rocket science I will tell you that now. Pupusas is made of a thick homemade corn tortilla. It is filled with a blend of cheese, cooked pork meat, and refried beans. To add flavor, we may add loroco which is a vine flower bud from Central America. They are served with curtido (Cabbage slaw with red chilies and vinegar) and a watery tomato salsa. A lot of people mistake the Pupusa with the Gordita from Mexico. The only differences are that the gordita is filled with more stuff and has an opening. This typical Salvadoran food has been around for more than 2000 years. They were created centuries ago by the Pipil tribes. They lived in the territory now known as El Salvador. Until the late 1940s this food became popular around the country when people moves out of towns to cities.     In the western area of the U.S, the most common Spanish speakers are Mexican, making their food the most prevalent. This has created a disconnect in the minds of the residents because they automatically assume any Spanish person or Latin food they come across is automatically from Mexico. In reality, Mexican food is uniquely known for its heavy use of spice and the main ingredient in their dishes, is corn. Even the candy is coated in a layer of chili. In an article with detailed facts about Mexico it is stated “Mexican candy is not only a piece of Mexican food, but also a piece of Mexican art. The “Calaveras de Azúcar”, or sugar skulls, are specially prepared for the Dia de los Muertos, the Day of the Dead” (Mexican Food 7).
