Breakfast Burrito Quick and easy to prepare, this burrito can even be eaten on the go if you leave off the sauce at the end. 1 medium onion, diced
½ medium green pepper, diced
½ medium red pepper, diced
1 tomato, diced
8 egg whites + 2 whole eggs (whisked)
4 10-inch whole wheat flour tortillas
4 ounces shredded cheese (part-skim mozzarella, veggie, or soy)
Salt and pepper
¼ teaspoon hot chili pepper, diced finely (optional)
Canola oil spray
½ cup salsa
1 avocado, peeled and sliced
