1.

PURPOSE
The purpose of this Standard Operating Procedure (SOP) is to describe the standard procedures to be followed for the preparation of toasted bread.

2.

INTRODUCTION
Dairy Australia Health Committee require that personnel preparing bread for consumer follow the appropriate health and safety procedure outlined in this document. This follows a number of injuries sustained and customer complaints.
It is good practice and common expectations within Dairy Australia and from regulatory agencies that this procedure is in place to ensure the accountability, traceability, and consistency of health and safety practices. It will improve the workflow, safe working practices reducing the amount of injuries and increasing customer satisfaction.

SCOPE
This SOP applies to preparation of toasted bread in all orders.

RESPONSIBILITIES

4.1

Chef/Preparation Assistant
To ensure that bread that is toasted is done so in accordance with the guidelines list in section 5.

SPECIFIC PROCEDURE

Preparation


Start by getting your toppings ready



Get your butter out of the fridge so it can come up to room temperature



Get your jam or marmalade out of the fridge or cupboard 

Get your plate and knife ready



Cut yourself 2 slices of bread using the designated bread knife
