ABSTRACT

RAPIDS is a privately-owned company that operates a number of cheesecake and wine restaurants. Originally founded in New York City, RAPIDS has since expanded to include international locations. RAPIDS was formed as a subchapter S corporation. The company abides by the highest ethical principles and ensures that all employees maintain these high standards. RAPIDS’s policies are all based on Christian principles. The company relies on a corps of legally-astute managers that use their understanding of the law to successfully guide RAPIDS through a complicated legal business environment. This paper details RAPIDS’s policies in a number of legal areas including lawsuits, contract law, international law, employment law, intellectual property, business formation law and securities law. CARMELIZED ONION AND BLUE CHEESE; Pate brisee crusted seasoned with fresh thyme and served with a micro greens in a lemon vinaigrette. 10

ZUCCHINI QUICHE; Sautéed with onion and fresh basil baked with an American pie crust and served with a salad of fresh mesculin. 10

HAM AND CHEESE; Fresh ham lightly sautéed and layered in a pate brisee crust with gruyere cheese. Served with fresh mesculin salad. 10

THREE MUSHROOM; Shitake, button and oyster mushrooms sautéed with shallots and fresh thyme on a pate brisee crust. Served with micro greens in a tomato vinaigrette. 10

NEW YORK STYLE; Sugar cookie crusted and flavored with vanilla and topped with bourbon flavor creme friesh. 9

BLACKFOREST; Chocolate cookie crusted baked with a layer of sour cherries and topped with chocolate shavings. 9

BLUEBERRY CITRUS; Baked with fresh blueberries, fresh lemon juice and lemon zest. Crusted with ground lemon sable cookies. Topped and baked with fresh blueberries. Served with blueberry sauce. 9
