Coconut Chickpea Crepes

Servings: 6 crepes
Ingredients
• ½ cup coconut milk
• ½ cup of chickpea flour
• 1 tbsp. tapioca flour
• ¾ cup of sparkling water
• 1 tbsp. nutritional yeast
• Dash of salt
Directions
1. In a medium sized bowl combine coconut milk and sparkling water, mix thoroughly.
2. Add in remaining ingredients and mix until batter is smooth.
3. Heat a 6” pan over medium heat and coat with olive oil spray.
4. When hot add 2 tbsp. of batter to pan, swirl to evenly distribute batter.

• ½ cup rice flour
• Small slice of ginger
• 4 green chilies diced
• ½ tsp. Gluten-free baking soda
• ½ cup water
• Salt to taste
Directions
1. In a medium bowl combine all ingredients and mix well until the batter is fairly smooth.
2. Heat a 6” non-stick pan over medium heat. Spray surface of pain with olive oil.
3. Add 2 tbsp. of batter to pan and swirl to coat the bottom of the pan.
4. Cook for 1 minute or until mixture begins to bubble. Carefully flip the crepe and cook for an additional minute.
5. Remove crepe from pan, serve immediately or fill with your favorite ingredients.
Quinoa Crepes with Quinoa Vegetable Filling
Enjoy this vegan crepe with a quinoa vegetable broth infused filling, packed with a wide assortment of fresh vegetables.
Time: 45 minutes
Servings: 10 crepes
Ingredients
• Vegan quinoa crepes (recipe in this chapter)
• 1 cup quinoa
• 2 cups Gluten-free vegetable broth
• 1 cup of diced red bell pepper
• 1 diced green chili
• ½ cup diced onion
• 1 cup diced red potato
• 1 ½ cups diced butternut squash
• ¾ cup diced

• 1 medium diced avocado
Directions
1. Prepare your quinoa crepes per the instructions in this chapter
2. Thoroughly rinse and drain quinoa. In a medium sized sauce pan, add the quinoa and allow to brown. Stir in vegetable broth and heat to boil. Lower heat and cook covered for 10 minutes or until liquid is absorbed. Fluff with fork and set aside.
3. In a large skillet, heat the oil. When hot, add in your onion, red pepper and chili. Sauté over medium heat until soft.
4. Add in remaining vegetables and spices, but omit the avocado and cilantro.
5. Allow mixture to cook for 20 minutes or until vegetables have softened, stir frequently.
6. Add in the cilantro just before you remove from heat.
7. Place a quinoa crepe on a flat surface, spoon in some of the quinoa, vegetable broth mixture, then add a portion of your vegetable mixture. Roll crepe and place seam down on plate. Repeat until all crepes and mixture are gone. Garnish crepes with diced avocado. Serve immediately.
