Craft Brewing History
Craft beer originated in the UK in the late 1970s, and things were never the same.

"Microbreweries" described a new generation of small breweries which focused on producing traditional cask ale. These breweries gradually came to reflect an alternative attitude and different approach to brewing. Craft brewing were/are known for being relatively small, independently-owned commercial breweries that employ traditional brewing methods and emphasize flavor and quality.

Craft brewing is huge and is most established here in the United States. The Brewers Association defines American craft brewers as "small, independent and traditional": small defined as an "annual production of 6 million barrels of beer or less", independent defined as at least 75% owned or controlled by a craft brewer, and traditional defined as at least 50% of its volume being all malt beer.

The brewery is powered by solar energy, having 10,000 photovoltaic modules covering its rooftops and parking lot. The company also processes used cooking oil from its restaurant for biodiesel use in its delivery trucks. In 2009, it reached an agreement with a local ethanol company to produce high-grade ethanol fuel from its discarded yeast. Spent grain is sold to local cattle ranchers for livestock feed; spent water is sent to the brewery's own water treatment plant, where it is reused, mainly as drip irrigation for its fields. Over 99.5% of the brewery plant's solid waste is diverted from

Bluegrass Brewing Company (BBC) is a nationally recognized, American craft beer company, whose mission is to create bold, unique beers, quality affordable food, and serve them both in a warm and comfortable, family friendly atmosphere. Founded in 1993, BBC is Louisville, Kentucky’s oldest micro brewing company, producing just over 2,000 barrels a year. ("Facebook: Bluegrass Brewing, 2012"). Although the company classifies itself as a microbrewery, the Brewers Association would actually classify BBC as a brewpub because they do not sell more than 75% of their beer offsite (Brewers Association, 2012). For the purpose of this paper, we will identify the industry that BBC competes in as the craft beer industry. The Boston Beer Company was founded in 1984 by a man named Jim Koch. Jim grew up in a family that had a long line of brewers in their history, including his grandfather Louis Koch, who was the original inventor of what became the Boston Lager recipe. Instead of pursuing the old family dream, or what was considered the family profession, he decided to go to college in hopes of becoming a management consultant but always keeping the beer industry in mind. Then finally, when it seemed like the perfect time to enter the beer market because of a lack of specialized or “better beers,” and after going door-to-door for several months with his partner Rhonda Kallman (who was the only other employee in the company at that time…

New Belgium Brewing Company started out with a simple bicycling through Belgium which also happens to be the home of some of the world’s finest ales. An American electrical engineer named Jeff Lebesch cruised around Belgium on in his fat-tired mountain bike pondering the thought whether or not he could produce the same high-quality beers back home in Colorado. Lebesch went back to his home in Colorado and started experimenting until his beers attained good recognition from some friends and so Lebesch decided to market them. New Belgium Brewing Company opened for business in 1991 as a small basement operation in Lesbesch’s home in Fort Collins but soon out grew that and now has its own custom-built facility. The people of these developing civilizations believed that beer had a supernatural background due to their lack of knowledge of scientific processes such as the fermentation that occurred in the gruel. The Egyptians told the story of how Osiris accidentally discovered beer by leaving gruel out in the sun, drank it, and when he liked it, he decided to pass it on the humans and the tale of Hathor and Ra. Also, the Sumerian god Enki’s story in a slab of Sumerian cuneiform gave the people a recipe on how to make the drink by describing the brewing process to the reader. With the idea of the god’s giving beer to humans, they believed that it would be a reasonable offering to the gods during religious ceremonies and other rites involving agriculture…
