Once everything is lined up, we get our tortillas we made earlier and fry them. We have to be careful not to over fry them, but a little crispy is preferred. We usually deep fry about six at a time, take them out and drain them on a napkin, to get the access oil off. We then put them on a plate and began to assemble them in the following order. To our tortillas, we add a pinch of beans, a pinch of chorizo and potato, chesse, sprinkle cabbage and drizzle the spicy tomato sauce over everything. Once we have completed this with all six of our enchiladas and added a piece of chicken,…

Take corn tortillas from the grocery store, ideally the blue corn because it is not genetically modified, and spread the desired amount on a cookie sheet. Lightly brush with olive oil or butter (2 tablespoons should cover the whole pack). Skip the olive oil/butter for extra crispy chips. Add a dash of sea salt. For extra flavor sprinkle on some paprika, cayenne, and chili powder (about 1/8 of a teaspoon of each). Using a pizza cutter cut the tortillas into wedges. Bake for 12-15 minutes, flipping the chips about half way. Keep an eye on them to make sure they do not burn. Of course, store bought chips will also work well with the guacamole recipe, but they are not as much…

I check if the chicken is cooked all the way through by cutting a breast in half and making sure there is no pink in the meat. When the chicken is done, you will want to strain the water from…
