ABSTRACT
This report entails the industrial work experience scheme carried out by me for the purpose of obtaining a bachelor’s of science degree in Metallurgical and Materials Engineering. The primary objective of the scheme is detailed comprehension of the theoretical approach to learning in the university and the practical understanding of what is obtained in the industry. The industry here in particular is the food and beverage industry of which sugar is the primary focus. Sugar, which is widely used by humans, is manufactured by plants during the process of photosynthesis and is found in many animal tissues. Various classes of sugar such as monosaccharide, disaccharides, trisaccharides and polysaccharides are abundant in nature. Amongst the commercially important sugars are glucose, lactose, maltose and most importantly sucrose from which we obtain sugarcane. Worthy of note is the fact that of all sugars, only sucrose can be crystallized.     The percent yield of ethanol from sucrose was successfully high, at 93.3 %. The final mass of the distillate obtained after fermentation and the fractional distillation process was 0.81g. The distillate was collected when the temperature reached approximately 50-70°C. The amount of ethanol that should have been produced was 13.66 ml, had the entire distillate (over 100 ml) been distilled fractionally . The density of the distillate obtained was 0.81 g/mL; therefore, the percent ethanol by weight was approximately 90%.     Sugar, chemically speaking, is an organic compound called sucrose, which is made up of two simpler sugars. It is composed of twelve carbons, twenty-two hydrogens, and eleven oxygen atoms. They form two structural rings, a glucose and a fructose ring. Sugar can be extracted form many different sources. Throughout history sugar cane has been the most important. There are six different types of sugar cane. The one know best is the Saccharum offcinarum which is the main source of sucrose. The process of extraction is in a series of steps which involved a great deal in precision of changing temperatures. Changing the state of the juices helps isolate the sucrose from the rest. After the sugar cane has been chopped, grounded, pressed, and submerged in liquid the temperature raises so the water can evaporate. At this point the water boils away leaving the solution supersaturated. This means the liquid is holding an over abundant amount of sucrose, a solution can do this at very high temperature. The liquid is slowly cooled and as it does a crystallized substance forms. The crystal is the solid form of sugar and the syrup left behind is molasses and is very sweet.
