Chapter 1
Introduction

This chapter discusses the background of the study, rationale of the study, objectives of the study, scope and delimitation, significance of the study, research methodology, research design, and respondents of the study, data gathering tool, data gathering procedures and definition of terms.

Background of the Study The Rice Milling is a process that helps in removal of hulls and bran’s from paddy grains to produce polished rice. Rice is rich in genetic diversity with thousands of varieties grown throughout the world. Rice has been one of mans most important foods. Today, this unique grain helps sustain two-thirds of the world’s population. It is life for thousands of millions of people. It is deeply embedded in the cultural heritage of their societies. About four- fifths of the world’s rice are produced by small scale farmers and are consumed locally. The basic objective of rice milling system is to remove the husk and the bran layers, and produced an edible, white rice kernel that are sufficiently milled and free of impurities. Depending on the requirements of the customer, the rice should have a minimum of broken kernels. (www.knowledgebank.irri.org).
Rice Milling in Ladol, AlabelSarangani Province is an operational industrial mill due to substantial diversity exists within these relative small scale operations. The population of AlabelSarangani Province is fast growing. This indication that business is also growing, Alabel has rice field plantation, about 1.90& (944 hectares) and 735 hectares if which are irrigated, while other areas are planted with coconut, cotton, banana and other diversified crops. As a result of the above mentioned opportunities the researchers decided to propose of putting up rice mill business located at LadolAlabelSarangani Province.

Non glutinous rice starch consists of 10-34% percent of amylose which makes the rice less sticky and harder texture. The amylose content of milled rice may be classified as waxy, 1-2%; low, 7-20%; intermediate, 20-25%; and high, >25% (Juliano, 1979). Varietal or amylose-group confirmation is required for selecting desirable rough rice that is consistent with the purposes of uses.
