Makes 2 to 3 servings
You Will Need:
• 1 Tbsp coconut oil
• 3 cups chicken broth
• 3/4 lb boneless, skinless chicken thighs, diced
• 2 garlic cloves, minced
• 1 small onion, diced
• 1 carrot, peeled and chopped
• 1/2 zucchini, diced
• 2 small tomatoes, diced
• 1/2 tsp ground cumin
• 1/2 tsp dried oregano
• 2 Tbsp chopped fresh cilantro
• Sea salt, to taste
• Freshly ground black pepper, to taste
• Juice of 1 lime
How to Prepare:
1. Place a heavy saucepan over medium high flame, then heat the coconut oil. Saute the onion, carrot, and zucchini until tender.
2. Add the tomatoes and garlic and saute until tomatoes are tender. Stir in the cumin and oregano, then saute until combined.

Makes 30 pieces
You Will Need:
• 1/2 cup coconut flour
• 1/3 cup coconut oil, melted and cooled
• 2 eggs
• 1/4 cup cacao powder
• 1/2 Tbsp ground cinnamon
• 2 oz dark chocolate
• 30 walnut halves
How to Prepare:
1. Beat the eggs in a bowl, then whisk in the cinnamon, coconut flour, and cacao powder until smooth.
2. Wrap the mixture with plastic wrap and refrigerate for about 1 hour.
3. Set the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
4. Take the cacao mixture out of the refrigerator. Unwrap it and place it on a sheet of parchment paper. Place another sheet on top, then roll out the dough into a thin sheet.
5. Peel off the parchment paper from the dough, then use a 2 inch sized cookie cutter to cut out pieces from the dough. Arrange the pieces on the prepared baking sheet.
6. Bake for 8 minutes, or until firm. Set on a cooling rack.
7. Meanwhile, melt the chocolate in the microwave or double boiler.
