The Quesadilla
The Quesadilla is a very popular food both served in the US and other Spanish speaking countries. The quesadilla can be served with many different ingredients and each has its own version. For example, in Mexico, a quesadilla is served with a corn tortilla and half filled with cheese and it is melted. In the northeastern part of Mexico, the quesadillas are like cheese tacos. Also, El Salvador has its own version of the quesadilla. Usually the Salvadoran quesadilla is like a dessert eaten with coffee. The ingredients are really simple and can be made about anytime. Quesadillas have many different styles and can be made by anybody with their own flavors.
Quesadillas originated form colonial Mexico and is the Spanish word for cheese queso. Quesadillas are usually made with tortillas and filled with mainly cheese. Other ingredients include various meats and vegetables could be added. The tortilla is warmed and the cheese is melted. Sometimes salsa can be added and it usually comes in a triangle shape. Many early Native Mexicans did not own ovens, so they had to steam the quesadillas. They would put meat wrapped with leaves and boil it. Frying was also another method to eat quesadillas. Even though quesadillas were originated from Mexico, it is shared to many parts of the world, including the United States.
A true quesadilla is made with masa dough. This is prepared from maize blanco and is dried with limewater. This was passed down from the Mayan, Aztecs and then brought to Mexico. In the 15th century, when the Spanish conquistadors arrived to the New World. The Spanish gave the name quesadilla to this food which means little cheesy things to this delicious dish. As such, quesadillas were a blend of Old World tradition and New World foods. Chicken quesadillas is also an Old World food introduced to Mexico by Spanish settler in the 16th century. Cheese is also an Old World food.
