CHAPTER ONE
1.0 INTRODICTION
Nyali beach international hotel is a five star hotel located in Nyali Mombasa. It was established in 1946 by Eve and Harry Noon who where husband and wife. Mombasa is found at the coast of Kenya. It is mostly known for its white sandy beaches and it has a lot of colonial history, considering this is the route which most colonialists used to enter into the country.

During my training period at the hotel I learnt a lot from all the different departments I went to and all the different people I met. I learnt how to deal with all kinds of people, considering some guests could be dissatisfied with the services offered. You therefore learn to deal with such people.
During my training in the catering department I also gained a lot of experience on how to prepare different dishes and what herbs go best with what found and so forth. I was to different kinds of cooking and dishes from different countries.
