Making Candy By. RJ Merna

In the Article “The Sweet Science Of Candy Making” by Tom Husband, the article explains how different types of candy are made, such as chewy (fudge), gritty (cotton candy), or hard (glass candy). You can make fudge by continuously stirring the sugar syrup after a period of cooling, so when the sugar crystals form, they stay very small and do not grow that to be big. You can make cotton candy or glass by cooling the syrup quickly to keep the crystals from forming. The main difference between the types are whether sugar crystals are allowed to form and if they do what their size is.
