Almond Flour and Sweet Potato Pancakes(Breakfast)

Almond Flour and Sweet Potato Pancakes
Makes about 12-14 pancakes - I have 2-3 for a serving Linda Castaldo Troutman
Ingredients:

1 cup sweet potato puree (I cooked my sweet potatoes in a dry crock pot, 2-3 hours on high or 5-6 hours on low. They came out extremely smooth and easy to puree with just a fork.)
2 cups liquid egg whites (or 12 egg whites) - you can substitute another liquid for SOME of this
3 Tablespoons flax seed meal (see note 2 below)
4 Tablespoons whey protein powder, low carb (can replace this with equivalent amount of flax meal or almond meal)
3/4 cup almond meal flour
1/2 tsp ginger
1/8 tsp cloves
1 tsp cinnamon
If too thick to spoon batter, add up to 1/3 cup of water. Optional Toppings: chopped pecans ghee, butter, or butter alternative - I use a tad of coconut oil pure maple syrup, agave or raw honey - I eat plain or with no sugar added jam Mix all ingredients. Blend until smooth.
Pour or ladle the batter onto a heated skillet and cook the pancakes evenly on both sides. Nutrition Facts Per Pancake (will vary by protein powder used):
The protein powder I used has 8 grams carbohydrates per serving.
