Adept Kapampangans in our town cook food with innovation. There are many dishes that are significant to our town. Examples of unfamiliar food are betute, buru and kamaru. Betute is deep fried stuffed frog that tastes like chicken. Buru is fermented rice usually served as a side dish with grilled fishes. Adobong Kamaru is crunchy crickets cooked in a sweet and sour sauce. Some familiar foods are also served. Kapampangans personalize these familiar foods with Kapampangan touch. Pindang, commonly known as tocino was a famous food from Pampanga. Bulalang is a fish stew with guavas. Sisig was also a famous food and it was first made in Pampanga. To satisfy diners’ sweet tooth, Kapampangan desserts like leche flan, white salad, kakanin, halo-halo are served. Because of these delightful dishes, Kapampangans bagged some awards. Some restaurants-- like Razons, Cabalen, Everybody’s Café, Bale Capampangan, Susie’s Cuisine, and etc. -- were featured on television, blogs, and newspapers as food critics said that Kapampangan food is luscious. These restaurants have their franchises all over the country or even, all over the world. Mekeni Food Corporation, a Kapampangan firm specializing tocino, has been recently conferred an international award in Geneva, Switzerland for the year 2012. Kapampangan food is an award-winning cuisine.
Kapampangan food tastes delicious. Kapampangan food has a combination of tastes: sweet, sour, bitter, salty and mild spicy. Sweetness dominates because sugar is one of the products of Pampanga. All of the meats they cook are tender and flavorful. Exotic foods, like crickets and frogs, are must-try because they taste better than they look like. Our food has its tempting aroma that will invite people to eat. Kapampangan foods also have distinct sourness due to Kapampangans own fermentation process. Most of the dishes have a good blend of tastes in your mouth. In Kapampangan fine dining restaurants, foods are appetizing because dishes are garnished
