Unsaturation in fats and oils

Topic
Organic chemistry, saturated and unsaturated fats.

Description
The students titrate different oils and fats mixed with Volasil against bromine water.

Apparatus and equipment (per group) w White tile w Conical flask w Dropper pipette. (Use the type of teat pipette usually fitted to Universal Indicator bottles, that do not allow squirting – eg Griffin.) w Burette (filled with bromine water) w Boss w Clamp w Stand.

Chemicals (per group)

w Bromine water (Harmful and irritant) 0.02 mol dm (This concentration does not have to be accurate, but if the concentration is reduced, less fat will be required to ensure sensible volumes of bromine water are used.) w Volasil (Volasil 244 from BDH) (This is a mixture of organic chemicals which can act as a solvent for this experiment.) w Cooking oil (animal) w Cooking oil (vegetable) w Olive oil.

Teaching tips
Other fats can be tried – eg melted butter, melted lard, melted margarine, and specific products such as Flora and Clover.

This experiment has also been trialled using KMnO4(aq) (0.0005 mol dm ) as the indicator. This turns from purple to colourless while unsaturation is still present. The procedure is the same as for bromine water, but portions of the potassium permanganate are added with swirling until the mixture fails to produce a colourless solution. The mixture requires more and more swirling as the amount of potassium permanganate increases. Warming fats in the Volasil using a beaker of hot water helps the fat dissolve and also speeds up the reaction.
This experiment should be done in a fume-cupboard with ready filled burettes.

    In the Biology 1103 lab, we conducted two experiments to determine whether or not the diet pill, Carb Cutter, actually worked. In each experiment we used an experiment tube and a control (blank) tube. The purpose of a blank is to set a base level (zero) from which other measurements can be performed. In the first experiment we were trying to see if the amylase would digest the starch. We put amylase, TRIS, and starch in the experiment tube. If the amylase were active the starch concentration levels would decrease. The second experiment was conducted to see if the Carb Cutter stopped the amylase from digesting the starch concentration. In the experiment tube there is amylase, Carb Cutter, TRIS, and starch. The Carb Cutter is working if it stops the activity of amylase. TRIS is just a buffer used in the tubes. The reason for creating the tubes is to find the absorbance level, which would tell us if the Carb Cutter was actually working. The absorbance levels should have gone down as time passes because there would be less and less starch to digest as time went on. The level of starch concentration should have decreased at a slower rate in the tube with Carb Cutter as opposed to the one without it. This however was not the case. The level of starch concentration was digested at a similar pace for each tube. The results following were that the tube with the Carb Cutter had the same rate of digestion, as did the tube without the carb cutter.…

The fats that are bad for us are saturated, and trans fats and the better fats are monounsaturated and polyunsaturated fats.
