What Steven Ells began with a small taqueria in Denver, Colorado in 1993, one may not have foreseen this venture to become the fastest growing restaurant chain in the last decade. By 2006, Ells’ idea made its initial public offering with 535 restaurants throughout the world. Things were going tremendously well for CMG until late afternoon on October 18, 2012 when Ells finished receiving the company’s third quarter results. While data indicated an overall satisfactory outcome, it was the competition from Yum Brands’ Taco Bell and their recent launch of the Cantina Bell menu that would result in what seemed to be the onset of a major problem.…

I have tried many things on the menu and two of my most favorite are the steak fajitas and the charbroiled chicken burrito. The fajitas come to the table sizzling on a skillet with a side of refried beans and rice. The vegetables included with the fajitas are grilled zucchini, grilled red peppers, grilled yellow peppers, grilled mushrooms, and grilled onions. These vegetables with steak and tortillas make for a mouthwatering burst of flavors that are perfect. The charbroiled chicken burrito is a fulfilling tortilla that is stuffed with lots of cheese and tender chicken that makes every bite better than the…

When I hear the word Mexico, images of mouthwatering enchiladas and quesadillas come to mind. And of course, salsa. Salsa may not seem very unique, but its history stretches back to the time that the Aztecs ruled Mexico (Dumois). The Aztecs used salsas and guacamoles to transform “something as tasteless as white chicken breast into a real delicacy, worthy enough to be served on the most sophisticated and elegant table” (Dumois). Salsa is made from ingredients that are already in Mexico, such as red tomatoes, onion, garlic, chiles, and cilantro, also known as coriander (Dumois) (Sherril C.). Some salsas are based on little green tomatoes, or tomatillos, and sometimes even chocolate is used to make certain salsas (Dumois). Mexican cuisine has a wide variety of influences due to the colonization during the Age of Exploration and trade between people from various countries and continents. In a word, Mexican food is a result of several, diverse culinary influences and therefore a mixture of varied cooking styles and ingredients in various cultures (Manohar).…

It consists of an appetizer, soup or salad, the main course: meat, rice and beans, and tortillas. For dinner they tend to eat lighter food items. In the western area of the U.S, the most common Spanish speakers are Mexican, making their food the most prevalent. This has created a disconnect in the minds of the residents because they automatically assume any Spanish person or Latin food they come across is automatically from Mexico. In reality, Mexican food is uniquely known for its heavy use of spice and the main ingredient in their dishes, is corn. Even the candy is coated in a layer of chili. In an article with detailed facts about Mexico it is stated “Mexican candy is not only a piece of Mexican food, but also a piece of Mexican art. The “Calaveras de Azúcar”, or sugar skulls, are specially prepared for the Dia de los Muertos, the Day of the Dead” (Mexican Food 7). Dominican or Puerto Rican however, have a strong Caribbean influence so their food is more focused on flavor then spice.
