Lactase Enzyme Lab
Type III Writing Assignment: Written in lab notebook 1. Results (recreate in notebook) 15 points/ _____ 2. Conclusion 20 points/ _____ 3. Questions 15 points/ _____
Lactase enzyme lab OBJECTIVES: 1. Understand how biological molecules are essential to the survival of living organisms * * 2. Compare the structures and functions of the major biological molecules(carbohydrates, proteins, lipids, and nucleic acids) as related to the survival of organisms.

* 3. Investigate and describe the structure and function of enzymes and explain their importance in biological systems.

Purpose:

This lab will examine the specificity of an enzyme (lactase) to a specific substrate (lactose). Students will observe the actions of the enzyme and how shape is important to enzyme reactions.

Background information:

Lactose, the sugar found in milk, is a disaccharide composed of glucose and galactose (both six-sided sugars). Sucrose, ordinary table sugar, is also a disaccharide composed of fructose and glucose. Glucose is a six-sided sugar and fructose is a five-sided sugar.
Lactase is an enzyme that breaks lactose down into galactose and glucose. Lactase can be purchased in pill form by people who are lactose intolerant. These people lack the enzyme, lactase, and cannot break down the sugar lactose into its component parts.
Although lactose is similar to sucrose, lactase will break down only lactose because of the shape of the sugar. In this lab, you will see lactase break lactose down into galactose and glucose. You will also observe what happens if the shape of lactase is changed due to heating.

Materials/ resources:

* Lactase tablets: these can be bought in any drug store or grocery store. * Fifteen milliliters of milk: any milk will work. * Water: used for dissolving the lactase tablet, dissolving the sucrose and boiling the lactase. * Sucrose: five grams per group. *

It is a digestive enzyme found in the intestines of mammals. Beta-galactosidase is an enzyme that initiates the breakdown of the substrate lactose. Lactose is a disaccharide sugar found in milk. It is composed of two rings. The rings contain 5 carbon atoms and an oxygen atom. Attached to the carbon atoms are a hydrogen atom and an OH group or another carbon. The rings are bound together by an oxygen bridge. This bridge can be broken when the enzyme Beta-galactosidase binds to lactose and a water molecule reacts with the oxygen atom in the bridge. (www.biology.kenyon.edu) Reactions in which water molecules are added are called hydrolysis reactions. When the lactose reacts with the water the oxygen bridge is broken. This results in the production of galactose and…

    Lactose Intolerance

The topic I chose to research was lactose intolerance. Lactose is the natural sugar found in milk. Lactose is made by joining a molecule of glucose with one of galactose (Willett 101). We are born with the enzyme lactase, which digests and breaks down the lactose. Some people do not digest lactose well due to a lack of lactase or their body may make lactase that does not work properly. Not all people with a lactase deficiency have digestive symptoms, but those who do have lactose intolerance.…
