Chicken Fricassee is a popular dish made in the Puerto Rican culture. With this dish, we cook red beans and rice on the side, making it a complete full course meal. The number of spices in this dish I guarantee will leave every taste bud in your mouth satisfied with every bite. As a Child, my father would make me chicken fricassee when I was sick. Not only does is make the perfect dish, but it’s also “the miracle soup”, gets the job done every time by curing my cold or whatever bug had got into our home. There are many ways this dish is made, but my daddy’s recipe is by far the best!

I put all veggies, chicken, olive oil, seasoning, garlic glove, 2 cups of water, few pieces of cilantro and can of tomato sauce into a big pot, mixing everything together giving it that beautiful color of red before bringing to a boil. Once boiling, let cook on high for another five minutes before turning the stove down too medium/low. Once the potatoes are soft, I can move on to the rice and beans. For the rice, I will need a medium pan, the white rice, and 4 cups of water. Set the stove on medium/high and Pour both rice and water into the pot at same adding a dash of salt and pepper.
