Having to work for the rich upper class living in luxury, the Morlocks had a hatred of the Eloi.
The working class age of the Morlocks most likely had them have a poor income of money and had little access to food. With the animal extinction of their age, the Morlocks resulted to cannibalism on the Eloi. As with the Eloi being weaker than the Morlocks, they resulted with a diet consisting of

As the working class of mankind slaved away underground, the rich upper class became weak as all their power relied on money and wealth. As the extinction of animals came, the rich developed a diet consisting of only plants. With no animal protein, the upper class became even weaker and frail to become the Eloi. As a result the working class becoming the Morlocks, they easily overpowered the Eloi as they evolved traits that enabled them to hunt the Eloi in the darkness and gained protein as a result of cannibalism.
As a result of their evolutions and adaptations of living underground, the Morlocks overpowered the Eloi. As a result of their past they live in a symbiotic relationship benefitting both the species.
