Then put in all your onion (peeled and quartered), a pinch of salt, ¾ of a tsp. of stock into the casserole dish with the short ribs. Make sure to put enough stock so that ribs would be full immersed in liquid. So if you have to put more beef stock or water, just put in more.
4. Then put a lid over the casserole dish and cook the casserole dish under medium high heat in the oven for 4-4½ hours.
5. To make the Marinade (make it while your beef is cooking) Get all the ingredients you need to make the marinade and put it in a bowl/ food processor. Then put a pinch of salt and mix all the ingredients until you get an extremely smooth paste. When you are done, move the paste into a non-reactive bowl.
6. When your short ribs from step 4 are done, take out your casserole dish and get your cooked ribs out of your stock (you can use the stock for your other dishes).
7. Then divide the short ribs into large chunks, and during this process, take out all the extra fat and bones.
8. Then put in the chunks of short ribs with the marinade from step 5 and mix the whole thing together until the meat is coated fully. When you are done, cover the bowl and put it in the refrigerator
