Case Study Analysis

IIMA PGPX
20.04.2013

Executive Summary

National Cranberry Cooperative, a processing and marketing firm of berries, is facing challenges related to operational efficiency, high overtime cost and lengthy queues of delivery truck.
Analyses of the case lead us to the following propositions to alleviate these problems:

• Channel restructuring: Current practice of manual grading misclassifies significant amount of berries as a superior grade that leads to overpayment of premium meant for class 3 berries. Our analysis shows a strong case for installing a colour grading system which will reduce mislaid payments. The colour grading system will lead to saving that will pay for the cost of installation of the device within one year. • Assembly line: Trend shows that percentage of water harvested berries that currently stands at 70% of the berries delivered to the plant will keep increasing in the future. In our existing set up the dryers that process wet berries are a bottleneck at 600bbls/hr capacity. Our analysis recommends installation of 2 additional driers which will augment the drying capacity to 1000bbls/hr. This will be in line with forecast that quantity of wet berries arriving at the plant will increase in the coming time.

Separator is common resource for handling both wet and dry berries with capacity of 1200bbls/hr. After installing an additional dryer facility, separator becomes a bottleneck at 1200bbls/hr. We propose installation of one additional separator which will increase separation capacity to 1600bbls/hr

• Resource planning – Current mix of staffing level leads to excess overtime payment. We propose to run two shifts during the peak time with mix of non seasonal and seasonal workers to cater seasonal demand and save manpower cost

• Bins : to cater for the increase in the amount of wet berries (Exhibit 1)

In February 1971, considered the present for purpose of this case, Hugo Schaeffer, vice-president of operations at the National Cranberry Cooperative(NCC), faces two primary problems that arise at receiving plant No.1(RP1) during the annual autumn cranberry harvesting season: (1)Trucks and drivers spend too much time waiting to unload process fruit at the receiving plant. (2) Overtime costs and absenteeism are out of control. There is also a secondary problem: half of the berries graded as top quality and awarded a 50-cent premium per barrel (bbl) are not top quality and do not deserve the premium.…

Maturity effects: Maturity at harvest had a marked effect on ORAC, total anthocyanins and total phenolics of the berries, for the "Brightwell" and "Tifblue" cultivars of rabbiteye blueberries which were the only two cultivars evaluated. Berries harvested immediately after turning blue had lower ORAC and total anthocyanins than berries well matured that were harvested 49 days later. ORAC and total anthocyanins increased 224% and 261% respectively, in the "Brightwell" cultivar, while in "Tifblue" they increased 164% and 176% respectively, with increasing maturity. Total phenolics increased by 169% and 113% in the "Brightwell" and "Tifblue" cultivars, respectively, with increased…

There were measurements of Plant height (cm), number of leaves; numbers of branches, total fresh and dry weights per plant were recorded in the end of the growing season. Weight and number of fruits in total and marketable yields were recorded from each replicate. Average individual fruit weight was also calculated from these data. There were also some chemical measurements to determine the Soluble Solids Contents (SSC) in fruit sap. The total content of some nutrients such as N, P, K and Ca were also determined in the leaves.…

    1. Introduction The concentration of a fruit juice is a widely used practice in the fruit juice manufacturing industry, and it has two main purposes: (1) to reduce the volume and weight of the product, with the subsequent lowering of storage, packaging and distribution costs, and (2) to increase the stability of the juice by reducing its water activity, which is a predominant factor in the majority of the mechanisms of deterioration. Although other methods of concentration such as freezing concentration and reverse osmosis are used nowadays, evaporation is still the…

The Rate of drying depends on the type of food, the processing conditions and the design of the drier (Fellows, 2000). The practical of dehydration of tomatoes was carried out in a cabinet dryer that was operated at the temperature of 80°C. In the cabinet dryer the food material was spread out on the trays and heating was facilitated by an air current sweeping across the trays (Earle, 1983). Figure 4 illustrates the air flow inside the cabinet dryer, supported from a fan for efficient functionality.…

Custard apple- cherimoya grows productively within the locality and climate of most cool highland areas of Kenya and Africa. However, it is not properly taken care of agronomically out of the low economic and medicinal importance attached to it. As found by Badrie and Schauss (2009), a preliminary evaluation of the post-harvest problems associated with tropical fruits in Costa Rica indicated that the post-harvest loss was 75.8%. The main problems were due to deficient field practices and lack of knowledge on the fruit quality parameters by fruit growers. Also, inadequate handling during the marketing process increases the loss. Most of it is left to be infected with pests and…
