“One of the very nice things about life is the way we must regularly stop whatever it is we are doing and devote our attention to eating”- Luciano Pavarotti. Sometimes people think cooking a home cooked meal can be a hassle or disastrous. Want to make a delicious meal your family will love? I will explain an easy way to make a home cooked dinner that will leave you and your family’s bellies full.
I like to start with the preparing the main course. Chicken thighs are a favorite in my house. Conveniently, chicken thighs are inexpensive, too. Start by taking the chicken outside of the packaging and rinsing it in water. With a fork, poke the chicken all over on both sides. In a bowl, combine the chicken with oil and spices. Don’t worry about following an exact recipe. I never use the same spices or exact measurements. Often, I use flavors I enjoy. For instance, I'll add a little of each of the following ingredients: pepper, cumin, paprika, garlic, adobo (an all-purpose seasoning), and a splash of Worcestershire sauce. Rub your choice of seasoning all over the chicken thighs. Preheat the oven to 425 degrees. Let the chicken spices and oil marinate while the oven is preheating. Line a baking pan with aluminum foil to place your chicken in once the oven is preheated. After the oven has been preheated, place the chicken in the aluminum lined baking pan, and place it in the oven. Set a timer for 30 to 40 minutes.
While the chicken thighs are in the oven, I make my side dishes. Some of my favorite sides are corn, asparagus or a baked potato. Potatoes can take a long time to cook, so when I'm looking for a quick fix, I make corn and/or asparagus. The asparagus can be baked with the chicken at the same temperature (425 degrees), but for only 20 minutes. Similar to the preparation of the chicken, line a baking pan with aluminum foil. Before you place the asparagus in the pan, trim the bottom of the asparagus. Cover the asparagus
