Why do we need fruits and vegetables?

As we already know that metabolism is a chemical process that is necessary for the generation of new cells and for releasing energy by breaking down of the molecules. Metabolism is actually occurring in each and every cell of the body that involves large number of chemical reactions and needs enzymes and compounds including vitamins, minerals, phytonutrients. Fruits and vegetables contain most of these important nutrients which are necessary for growth and redevelopment of tissues in our bodies.
We can not get all nutrients from any single fruit or vegetable, to get all nutrients we need to eat a variety of fruits and vegetables.

How to eat fruits and vegetables
Almost all fruits are eaten raw, while in vegetables not all vegetables can be eaten raw. Some vegetables like tomatoes, brinjals, cauliflower are better when cooked. The nutrients such vegetables cannot be digested properly when eaten raw.

Potassium
Fruits and vegetables are rich in potassium which plays a role of electrolyte in our body and is responsible for movement of fluids across the cell wall. Potassium helps in protecting our body against kidney failure, heart disease, blood pressure, stroke, arthritis, cancer, digestive disorder and infertility.

Dissolvable and non dissolvable fiber
Fruits and vegetables contain dissolvable and non dissolvable fiber. The dissolvable fiber absorbs water and forms a gel like substance which reduces the absorption of cholesterol in small intestine, slows down the digestive process and makes us feel fuller for a longer time. The undissolvable fiber cannot be digested they absorb water and form a sponge like substance which helps in passage of stool in large intestine. Vitamin C refers to the compounds like L-ascorbic acid or ascorbate which is an essential nutrient for all humans and animals. It is necessary for repairing cells and healing wounds. Vitamin C is good for healing cold and bronchitis. Vitamin C also helps in repairing bones.

Folate
Foods like spinach, lemon, banana, lettuce are high in folic acid. Folic acid is required to cure low blood levels and anemia. The fruits and vegetables rich in folic acid help preventing alzheimer, memory loss, and hearing problem.
