A. Background of the Study

Many of us are a big fan of wine. We can drink it after a meal or even before we sleep. Red wines are one of the common wines that we can easily spot on our supermarkets. Even though wine is considered as alcohol, it has a lot of benefits if we look into it. It is already proven that it is actually good for your heart to have a glass of red wine every day. Some people love to drink wine before bed and it is actually a great idea especially if you want to get rid of your insomnia and anxiety. The idea of making a wine that can give us nutritional benefits is good, so why not make a wine that is made of a new fruit? Our group planned to make a new wine that is made of calamansi , lemon and dalandan. Calamansi or calamondin is a fruit that is indigenous and is widely cultivated in Philippines. We don’t need to mind about the season of calamansi since it is available year round in the Philippines. Lemon is a small evergreen tree that is native to asia. It is widely used for culinary and non culinary purposes throughout the world. Lemons were the primarily commercial source of citric acid based on fermentation process. Lemon oil is one of the fermented examples. Based on the research, the lemon oil aroma does not affect the immune system but it can enhance mood. The low pH of juice makes it antibacterial that’s why in india ,lemon is commonly used as traditional medicine. Dalandan or bitter orange is usually counted as apetite suppressants due to it’s active ingredient “synephrine”. Bitter orange has a thick, dimpled skin, and is prized for making marmalade or a fruit preserved made from juice and peel of citrus. Calamansi , lemon and dalandan are all fruits that is high in vitamin C. The benefits of vitamin C may include protection against immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease, and even skin wrinkling.     I was born in the late 60’s to the parents of first generation Americans. My grandparents migrated to America through Canada from Scotland in the early 1930’s. Eventually, both sides of the family landed in the Black Hills of South Dakota. My father’s side of the family worked at Homestake Gold Mine in Lead, South Dakota and my mother’s side of the family ran a trailer park in Hill City while my Grandfather worked at Mount Rushmore. After my parents married, my father followed his father by working at Homestake, while my mother was a stay at home mom. We lived on a hillside over the fairgrounds in Deadwood on Railroad Avenue. My father’s parents lived next door to us. Due to the fear of landslides, the city of Deadwood forced my grandparents and us to move off the hillside. As of 2008, the houses were still on the hillside, granted they slid downhill slightly. It is amazing how tiny the houses are, I would say no more than 400 to 500 square feet, and there were 5 of us who lived in the house. When I was about four years of age, we left the Black Hills and moved to a small mining town in Colorado called Creede. It is here I remember being left handed and having to learn to do things differently. I guess I go against the grain with handedness, according to our studies it suggests it is linked by a genetic basis. (Linke & Kersebaum, 2005) No one else in the family has been left handed, and even today I am still the only one. I still do things different from left or right handed people because I had to learn my own way. I started school while living here; we had a one room school house, and I remember we would follow the creek line down to school and back up the creek line to get home.     I was not able to get a formal orientation to the school until the week after spring break. This was not due to the school administration schedule but rather my own laziness. On the day of my orientation I reported to the middle schools vice principals office, Mrs. Spince, and I proceeded to ask her questions about the schools demographics, testing, textbooks, funding for school clubs, and how students are reprimanded. We talked about all of the above for about forty five minutes then she directed me towards the nurse’s office and I was off. While I was with the nurse we discussed her background and basic duties such as treating students with diabetes and distributing daily meds to those who need them. The nurse that was there the day I visited was actually a nursing student at East Georgia and she only works a few days a week. After I talked with the nurse I walked to the library and talked to the media specialist Mrs. Gorver we discussed what she does including but not limited to choosing books for the library, assisting teachers with tech support, assisting in standardized testing supervision, helping students with choosing books for projects, helping students writing papers, and starting a book club. After meeting with Mrs. Gorver I had a meeting scheduled with the student counselor but he was not there. As for a tour of the school the teacher I shadow Mrs. Aubrey walked me around the two hallway school explaining to me that the main hall is for the High School students and the smaller side hall way is for the middle school. She also took me to the library which although is rather cozy fits the small school well. In the library there are 2 computer labs for the teachers to take their students to do group work. Off of the library there is also a work room with an industrial printer, a wall full of VHS tapes, and a large laminator.…
