Corn Chowder is a favorite from many childhood memories of cold weather, great hot food and comforting warmth. It’s is good anytime, but mostly when the mercury dips below the comfort zone and it warms you from the inside out.
This recipe is not only easy, but it’ll taste like you spent hours making it. Everyone seems to love corn chowder. A few quick turns of the fry pan and all the rest is slow cooking from the heart. This recipe serves six to eight hungry people.
Easy Soup Recipe - Corn Chowder Soup
You will need these ingredients:
• 2 cans (14.5oz each) chicken broth
• 1 bag thawed frozen corn
• 3 large red potatoes, diced into ½ inch squares

Fry the bacon first and set it aside on paper towels to drain all the grease off. Allow to cool before crumbling.
2. While the bacon is cooking, dice the onion, bell pepper and potato, and slice the celery.
3. Place the frozen corn into a strainer and then run it under cold water to thaw it. Allow to drain.
4. After the bacon is done and removed, add the onions, bell pepper, celery and spices to the hot bacon grease in the pan. Saute them, stirring occasionally, until the onions are transparent, then transfer the mixture to the crock pot, making sure to get all those tasty specs and toasted spices from the pan.
5. Add the chicken broth, corn, diced potatoes and half the bacon crumbles. Stir.
6. Put the lid on and cook on low 7 to 8 hours.
7. Remove the lid and turn crock pot on high.
8. Mash some of the soup, but not all of it. You still want whole pieces along with a thicker broth. Stir well.
9. Add the heavy cream and stir well.
10. Heat uncovered until thoroughly hot.
11. Dish into soup bowls and garnish by sprinkling the rest of the crumbled bacon on top.
