I began looking around the kitchen and was quite stunned with the workers that I had observed. There were eleven workers, out of eleven, eight of them were women whom appeared to be older. Six of these women looked to be Hispanic women, with only one African American woman and one White lady working. Surprisingly, I observed that most of these workers appeared to be in their forties or older. Apart from the ladies there were two African American men who were wearing grey shirts and unlike the women who were stationed in one assigned area, they were walking around back and forth. From previous experience, I could assume that those men were managers. At first, the traffic was slow therefore, the workers were concentrated in cleaning their station and organizing their tables and containers full of vegetables. One Hispanic
