In many high schools around the nation, students aren’t normally eager to discover what’s for lunch. However, at Catholic High the lunch menu is always a hot topic.
Catholic High’s cafeteria is far from the grotesque lunch rooms that appear in movies. It is not filled with stern lunch ladies in hairnets who slap down mystery meat onto student’s plates. It is filled with an expert staff who excel at their job and do it with a smile on their face.
Thanks to the staff of Sage Dining, lunch time at Bishop Sullivan Catholic High School is a daily culinary adventure. Sage’s talented staff of trained chefs strives to serve foods made from scratch, which distinguishes it from other dining service companies.
“Not every school is trying to make headway in serving fresh and local organic foods. I think we’re one of the leading companies in that area. We really do have high standards in the quality of food that we serve,” said Food Service Director Marian Bittner detailing the aspects of what makes the Sage Company so unique. The Sage staff takes time in preparing their food and ensuring that the foods they serve are as fresh and nutritious as possible.
“We usually start the prep the day before in the afternoon, like dropping off the vegetables and getting stuff ready. And then the next day, Daryl gets everything done in the morning from the hot line. And salads are the same, she might prep some of the stuff the day before,” said Bittner.
Every food is served fresh and the only items that aren’t made from scratch are the hamburgers and the chicken fritters.
The Sage Company, whose main headquarters is located in Lutherville, Maryland, is large and continuously expanding.
“We have around 500 units, nationwide and we’re starting to go into Canada,” said Bittner.
