Fourth, obtain a knife, and begin to cut all the jalapeños down the middle to devein them. Try and take all the seeds out unless you like spicy foods, but if not take all the seeds out. Fifth, wash the jalapeños off again to make sure they are clean. Next, get any cheese to fill the inside of the jalapeños. Spread the cheese evenly throughout the jalapeño by hand. Once you have done this it is now time to make the batter.

Once both bowls are filled with add the fajita seasoning to both of the bowls to add flavor to the jalapeños. Get one jalapeño and dip it into the flour to get a nice coating on it, and then dip it into the egg and milk bowl as well for about five to ten second moving it around. Once this is done, you must roll the jalapeños around in the breadcrumbs, and make sure the jalapeño is covered mostly with the crumbs. Repeat this process for each jalapeño.
Next, once all the jalapeños have been covered in the batter it is time for them to be dipped in the oil.
Get a plate that is lined with paper towels to get the excess oil off after they are done being cooked. Once the oil is about 375 degrees fahrenheit drop about three to five jalapeños in the pot for about four to five minutes, or until they are a golden brown. Now, pull the jalapeños out of the oil and place them on the plate lined with paper towels. Repeat this process until the jalapeños are done.
Finally, preheat your oven to 350 degrees. Place the jalapeños on a oven safe tray, and then place them in the oven for about three more minutes. Once they are done place them on the plate with a new paper towel liner. Let them cool down for about ten minutes, so your mouth does not get burned.
