Love Your Kale Analysis
Ciao,
Welcome to Love Your Kale. I started this blog to share healthy and mostly vegan recipes, that can be made with simple and inexpensive ingredients.

I was born and raised in Italy, of course in an Italian family, in a city called Bergamo. While in high school with two working parents, my sisters and I had the "duty" to cook during the week, so that when my parents would come home for dinner, everything would be ready to eat. At that time I did not enjoy cooking, mainly because I saw it as an obligation and also because of the complex teenage years.

At sixteen my parents gave me the (lucky) opportunity to travel to America and be an exchange student for a year. It was an amazing experience that changed my life in many positive ways. However, a very sad fact was that living nine months in Indiana made me gain 20 pounds. I had been pretty slim my whole life and I really could not believe what living in another country could do to you.

Looking back now, I understand that it was mostly because of my bad habits with foods that I gained so much

This time I am older, hopefully wiser, and with a better understand and knowledge about food and conducting an healthy life. I believe I will be staying in America for a while, since my fiancé is American, and this means I have to be careful with what goes on my plate.

I decided to create this blog to, first discipline and inspire myself about eating healthy and correctly, and second, to help and motivate others to eat healthier meals. I do not label myself as vegan, vegetarian or whatever else. I will eat meat sometimes, because I do not believe in deprivation and completely avoiding certain types of foods. However, I do believe we can all benefit from eating more plant-based meals, which are meals based on vegetables, fruits, whole grains and legumes.
