I’m here to show you guys a favorite dessert of mine, Chocolate molten lava cakes. I used to make these all the time. They’re easy and fast, not to mention impressive if you have a few guests over.The hardest part is getting them out of the ramekins. But if you put enough butter on the ramekins, and if you run a knife around the inside you shouldn't have any problems.
Ingredients:
½ cup unsalted butter. Plus a bit more for buttering the ramekins.
¾ Cups chocolate (Preferably bittersweet)
2 large eggs
1/4 cup and 2 tablespoons brown sugar, packed
1 teaspoon vanilla extract
3 tablespoons all purpose flour
Pinch of salt
First things first, you need to preheat the oven at 350 degrees. Then you need to generously butter your ramekins (If you don’t have ramekins don’t worry. I used a muffin tin the first few times I did it. You might just need to take them out earlier.), if you don’t use enough butter they will stick. You can either melt the butter or use the back of a spoon to butter them. Do not substitute for non-stick cooking spray. Put the butter in a bowl and melt it in the microwave.
After it’s all melted immediately put the chocolate in the butter and stir. The butter should be hot enough to melt the chocolate. Stir until there are no more lumps. After this is done set aside for
later.
In a medium or large bowl (I use the kitchenaid, but I realize some of you might not have one.) beat the eggs,brown sugar, vanilla and salt at high speed. After it is pale and mixed add the chocolate mixture and stir.
Pour the batter evenly into the ramekins. (Depending on the size of the ramekins you will have a slightly smaller one. That’s okay.)
Bake for approximately 11 minutes. Take them out when you can clearly see that the outside is done but the middle part isn’t yet. (The middle is the ‘Lava’ part.) Let them cool for 1-2 minutes before trying to get them out.During this time take a thin knife and run it along the inside edge of the ramekins. After they have had time to cool a bit take a towel and flip them upside down onto a plate. Be careful not to drop them.
You can cut the first one down the middle to see if it’s done. If it’s perfect chocolate should come out of the middle. After you put it on a plate, sprinkle some powdered sugar on top,add some vanilla ice cream and you are done!
