Reasons for choice
This task was all about dairy products, each dish was required for something dairy in it. I chose each dish carefully to ensure it showed some type of cooking skill as well as a dairy product. When I was choosing my dishes I had to consider the amount of time it will take and whether I can make them all in time.
The dishes I decided to make were: Toad in the hole, Cheese broccoli and potato bake, Peach clafoutis and Pavlova.
I chose to make cheese; broccoli and potato bake in my assessment because the dish is a high level as it includes a variety of skill. The main skill this dish requires is a roux sauce which is smooth with no lumps. Another reason why I chose this particular dish is because it includes many dairy products such as; milk, cheese and butter. I find this dish reasonably quick and easy to make regardless of the high skills. It doesn’t take too much time although it’s the longest dish to make. But if I’m efficient I will be able to make this meal along with three more dishes in the two hour time limit.
Another one of my dishes I made was pavlova. This was also a high skill dish because you have to ensure the pavlova will rise well, and cook just right for a mellow middle and a crispy shell. I served strawberries and cream on top of the pavlova. I whipped the cream which is another skill I was able to show by not over or under whipping it. After whipping my cream, I also used another good skill which is to pipe. I piped the whipped cream onto my pavlova. This is a fairly quick dish to make and prepare for although the cooking time is pretty long.
I also made toad in the hole and served it with duchess potatoes as well as green beans. This particular dish was suitable for the task criteria because it contained some dairy products being: milk, butter and cream. The main skill in this dish was to pipe the duchess potatoes in an appealing way. Also, making the batter for the Yorkshire pudding and ensuring it wasn’t lumpy is also a
