They discovered a tribe named, “Tiquili,” which the migrating Spaniards quickly called their new home. Little did they know that the soil and mud within Jalisco is so special that it’s one of the only places where the plant Blue Agave can grow. Which is the main ingredient in the soon-to-be famous drink, Tequila. After coexisting with the tribe for a while, and realizing the soils potential, the Spaniards got to work. They constructed a rudimentary mud known as “Alquitara” which was used to distill the drink called Pulque. As the word got around in 1630s, the Spanish Creoles also started cooking and distilling the Blue Agave plant and called it “Vino de Mezcal.
The drink has gone through many names, it has been called Mezcal Brandy, Agave Wine, and Mezcal Tequila before it was simply named just Tequila.
