Enzyme Pectinase Lab Report
An experiment was run to determine which enzyme (pectinase, and cellulase or combinations of the two enzymes) maximizes juice production and would be most cost effective. The proposed hypothesis was if the enzyme, pectinase, is added to apple juice, then the more juice will be extracted than if cellulase were added because pectinase holds the cell wall together and if it is separated apart from each other, then the more juice would be able to flow out. The experimental data show that during the ten minutes of filtration, apple juice came out of the pectinase faster than the rest of the enzymes. During the last few minutes of observing, the apple sauce with pectinase was still producing apple juice, only slowing down a little bit, while the …show more content…
An enzyme is a biological catalyst meaning it speeds up chemical reactions in living things. Enzymes are made from amino acids and are proteins. The purpose of speeding up chemical reaction is that the cells are able to build things and take things apart quickly and efficiently. All the work carried out in a cell is carried out by enzymes. In the real world, it was discovered that cellulase and pectinase can have many health benefits. It was found that pectinase and cellulase are very healthy enzymes that humans consume on a day to day basis. For example, pectinase increases digestibility, as well as provided fuel necessary for colon lining; and a hospitable environment for beneficial bacteria. Similarly, cellulase helps to maintain blood sugar and cholesterol levels, plus, it supports the cell membrane. In discovering the health benefits of these enzymes, it was brought to mind that these enzymes have a greater impact on the world-wide health problems. Looking beyond how costly these enzymes are, it can be found that there are many health benefits of these enzymes. The consumption if these enzymes are necessary, and humans should consume them daily in order to improve their

    In this lab we used a solution of lactase to test the chemical and physiological properties of this particular enzyme and determined whether the lactase came from human cells or bacterial cells. In the statistical analysis statistical formulas and techniques are used to analyze the significance of a set of data and the validity of the conclusions made based on that data. These are some terms and definitions that will be crucial to understanding the validity of this experiment. An enzyme is a protein that acts as a catalyst to lower the activation energy required for reactions to progress in the cells. Null hypothesis states that there will be no difference between the result of two separate variables A and B. The null hypothesis states in regards to the enzyme experiment that lactase will not bind preferentially, or more specifically, to maltose or lactose. Before a null hypothesis can be rejected we must notice a large difference between glucose produced from maltose versus lactose. Alternate Hypothesis states the opposite of null in that there will be differences between the results of A and B. Probability is an indication of likelihood very similar to a percent chance. All probabilities are between 0 and 1, with probability zero indicating an event is impossible and one indicating an event is certain to occur. T-value or t-Test is what is used to determine whether or not the null hypothesis is valid. This t-value can be used to create a p value which in turn will determine whether the results are statistically significant or not. Based on what I know about the effect of temperature on the enzymatic activity of lactase, I hypothesize that higher temperatures will cause denaturing in the enzyme causing it to be less effective and lower temperatures will more conducive to enzymatic activity, and a higher pH will be more conducive to enzymatic activity.…
