What was the last thing you ate? Every American has over thousands of restaurants to choose from and the biggest question customers have to face is, “What should I eat?” Our food advertising industry has convinced consumers to eat their food because it is “organic” or “artisan” or “healthy” food, leading to an abundance of diet scenarios that one can choose from. Do you want to be vegetarian or pescatarian? Stop eating carbs or stop eating sugar? All the different diet scenarios impact our environment in some way, shape, or form. But there is a diet scenario for the 320 million people in America that could meet our metabolic energy needs in an environmentally sustainable way. In a recent study, researchers said reductions in meat consumption greatly cut greenhouse gas emissions from the food and agriculture sector. With the healthy diet that still contained some meat, global greenhouse gas emissions from the food sector only increased 7 percent by 2050, compared with an expectation of a 51 percent increase under business as usual (Springmann & Godfray & Rayner & Scarborough, 2016). Reducing greenhouse gas emissions is beneficial because the rise in climate change is linked to the climbing levels of greenhouse gases in the atmosphere. By taking steps now to reduce greenhouse gas pollution we can reduce future climate change. People who eat a diet not heavily focused on meat, but instead focuses on fruits, vegetables, grains, beans, legumes, and nuts, generally eat fewer calories and less fat, weigh less, and have a lower risk of heart disease than those who do not (Staff, 2014). A diet with a minimal amount of meat decreases your risk of diseases, including heart disease and provides for a more nutritious and healthy diet for an American consumer.
