Ingredients
2 large eggs, whisked
OIive oil, 1 tbsp
Almond milk (unsweetened), 1 cup
Tapioca flour, ¾ cup
Coconut flour (sifted), 3 tbsp
Sea salt, ¼ tsp
Preparation Method
In a bowl, add almond milk, whisked eggs and olive oil and mix together.
In another bowl, add all the dry ingredients including tapioca flour, coconut flour and sea sold and toss to combine.
Now add the wet mixture to the dry mixture and whisk to fully combine.

Let it cook untouched for 2-3 minutes over low-med heat until tortilla is browned on the bottom. Flip to cook the other side for a few minutes. When done, remove from the pan and place tortillas on paper towel-lined serving plate. Prepare more with the remaining batter.
