For my second cultural activities, i went to eat at a Mexican restaurant called El loro that is located in crystal. They had a lot of options but I decided to try enchiladas de mole which are traditionally made mostly in Mexico. enchilada has been the most popular Mexican dishes for a long time. Even though enchiladas were first introduced 19 centuries they became popular in the 20 the century. Some people have traced back the origin of enchiladas to pre-Columbian culture particularly to the Aztecs. However, this is only partially true because the Aztecs had chili peppers, sauces, and tortillas but there is no evidence suggest that they made anything similar to what Mexicans call enchiladas.     Tex-Mex foods consist of a variety of the same ingredients as Mexican food. The Tex-Mex Cuisine is based on Corn, Pinto Beans, Tomatoes and Chili, Texas chile, Tacos, Fajitas and much more ingredients.     When I started think about my senior project I knew that my main idea should be cooking. I had few more ideas, but cooking come up the most. After few days of research I created a plan to succeed in my senior project. Harriet Van Horne, an American newspaper columnist and film/television critic, once said: “Cooking is like love. It should be entered into with abandon or not at all.” With it in mind I started working on my World cook book, and as expected it was complicated but doable. First I had to take an online class there I’d learn cooking basics. My teacher was Cathy Erway. She is the author of a book “The Art of Eating In: How I Learned to Stop Spending and Love the Stove.” The course is based on this book. After taking it, I think she is very talented mentor and cook, because when she taught me on how to cook myself and not rely on someone else. She gave me good ideas on where to find fresh vegetables and fruits, on how make some dishes and salads quick, told me many cook’s tricks and tips. This was very comprehensive but easy to learn class, and I learn a lot. One advantage of this course was that I can take it at my own pace, with no deadlines. In the first day, after glancing at the course syllabus, I thought I can complete it in 5 to 7 days, but it took me 2 weeks to finish it. In each class of this course Cathy picks one new recipe of a dish, specific to a new country, and shoots a video of how properly cook it. We, as students were able to ask Cathy questions related to that course, and I used this option when I made my own dishes for the project.…
