September 18th is a wonderful day for the Chileans. This is the day that they celebrate their Independence. This day was chosen because in 1810 that was the day that they started down the road for Independence, though that dream was not fulfilled till February 1818. Parades, which include their traditional cowboys, dances, drinking,traditional food and music are all part of their celebrations. Their cowboys wear flat top hats, colorful ponchos or manta, as well as shiny high heeled boots with spurs. The celebrations take place under a ramadas. A ramadas has a thatched roof made with tree branches and is a temporary open building. Christmas is another time of celebration. For Chileans, Christmas time is in the summer, but they still do some of the things people do here in America. One of these things is their Santa – Viejito Pascuero or Old man Christmas. Viejito Pascuero delivers the gifts in a sleigh and either enters the house through the chimney or a window. Most of them also remember that Christmas is to celebrate Christ. Carols will be sung and the Bible story about Jesus' birth will be read. They even will attend mass on Christmas Eve. The families will get together
First, comes breakfast. This usually consists of toast and butter along with instant coffee and milk. Lunch, which is served around 1-2 pm, is the next meal of the day. This is the meal that Chileans serve as their biggest meal and they have two main dishes. The first one may be a salad. Their common salad is call ensalada chilena and contains tomatoes, onions, oil, vinegar, and the herb cilantro. The second dish will be beef or chicken along with vegetables. Then at 5:00 pm they will have their next meal called, once. For this meal they have tea, bread and jam, with cheese and plata (avocados). The name for this meal must come from the British tea time which is at 11:00. Finally, they will have their forth meal around 9 pm. This is usually one substantial
