Makes 6 servings

You Will Need:
• 2 skirt steaks, 1 lb each
• 6 Tbsp olive oil
• 2 onions, sliced
• 4 garlic cloves, minced
• 2 serrano peppers, minced
• 2 jalapeno peppers, sliced
• 2 green bell peppers, seeded and sliced
• 2 red bell peppers, seeded and sliced
• 4 Tbsp chopped fresh cilantro
• 2 limes, quartered

For the Rub:
• 1 tsp chili powder
• 1 tsp onion powder
• 2 tsp cumin
• 1/2 tsp paprika
• 1/2 tsp sea salt
• 1/2 tsp freshly ground black pepper

How to Prepare:
1. Combine the ingredients for the rub in a bowl. Rub the mixture all over the steaks, then set aside.

Heat another tablespoon of olive oil in the same skillet and sear the steak for 4 minutes per side or more. Transfer to a plate and let rest. Repeat with the second steak using another tablespoon of olive oil.
4. Heat the remaining olive oil in the skillet, then saute the pepper mixture again.
5. Chop the steak into thin strips, then add the strips into the skillet. Stir fry everything until browned and heated through.

Rinse the pork chops thoroughly, then blot dry with paper towels.
2. Season the pork chops with salt and pepper on both sides. Set aside.
3. In a bowl, combine the flax seed, cumin, coriander, cardamom, and salt and pepper to taste. Dredge the pork chops in the mixture until completely coated. Set aside.
4. Place a cast iron skillet over medium high flame and heat the coconut oil.
5. Reduce to medium low flame, then cook the pork chops for about 3 minutes per side, or until golden brown. Remove from heat when pork chops’ internal temperature reaches 145 degrees F.
6. Place the cooked pork chops on a platter and cover with foil to keep warm.
7. In a the same skillet, stir in the bell pepper, onion, and celery. Saute until tender, then pour in the white wine and let simmer until liquids are evaporated.
8. Spread the vegetables on a platter and place the pork chops on top. Serve right away. Green Pork Chili
