 1/6 cup cilantro, chopped
 Juice of 1 lime
 1/4 red bell pepper, diced
 1 scallion, thinly sliced
 1 head lettuce, rinsed
 Salt and freshly ground pepper

Directions
1. Melt the coconut oil in a large skillet over medium heat. Add onion and cook for 4-5 minutes, until tender. Add the peppers, garlic and salt and mix. Cook for another minute.
2. Add the curry paste to the pan and cook for about a minute stir to coat, the other ingredients. Add the coconut milk and pumpkin and boil. Add chicken and cook for 10-12 minutes, or until chicken is cooked. Lemon juice. To serve Sprinkle with coriander and cashews.

4. Top each tortilla cooked shrimp, lettuce, avocado and coriander. Serve with a slice of lemon.
