Ingredients
Packaged pancake mix with additional ingredients noted in package instructions
Oreo cookies (as much as you like)
Cooking oil (suitable for frying)
Confectioner's sugar (optional)
Steps
Chill Oreo cookies in the refrigerator for four hours.
Prepare the pancake batter according to the directions on the package. Be careful to make sure it is a fairly thick batter. Using an electric mixer prevents the batter from splattering all around the kitchen!
Pour about 2 or 3 inches (5-7.5cm) of cooking oil in a heavy cooking pot. Typically, a frying pan is not deep enough to "float" the cookies as they fry. Use an oil able to withstand high heat, such as peanut or coconut oil, then
Dip the Oreos in the prepared pancake mix.
Put the Oreos in the frying pan carefully. Leave room between them for the batter coating to "rise" (expand) without the cookies touching each other. Cook for about 1 1/2 minutes, until the batter is golden brown. Turn, if necessary, for each side to brown. Remove the fried cookies. Dust with confectioner's sugar if desired, and allow to cool.
