In this report, I will be comparing two different menus from two different restaurants. These two restaurants are Bellaggio’s which is an Italian themed middle market restaurant and Riverside Indian Fusion which is Indian themed fusion food restaurant. The menus are vastly different as they both cater for different cultures and continents and are two different types of markets.
The ingredients and products create financial constraints which affect Riverside Indian Fusion more as they have to buy more expensive products to create the type of fusion food that they are looking for such as spices from India mixed with some Italian pasta which would cost a lot as spices have to be imported and can take longer to get to the destination. On the other hand, Bellaggio’s does not have the same problem as it does not cost a lot to make pasta or pizza and purely depends on the fillings and toppings for the meal which can make the price either go up or down on the product. On one hand, the fusion food restaurant is aiming for an upper market audience who are interested in eating fusion food and can afford to go to a fusion food restaurant and the influence this can have on dishes is that customers will expect better products than an ordinary restaurant meaning that the dishes will need to be changed into more complex meals. On the other hand, the middle market Italian themed restaurant changes its dishes to suit a more general population; this includes making meals less basic than upper market meals but still giving a special’s board if people want a real upmarket meal.
