Summary Of The Science Of Junk Food
In the article “The Science of Junk Food” written by New York Times reporter, Michael Moss. He explains the science behind junk food and how it becomes an addiction. It starts off by introducing the meeting that was on April 8,1999 which was held by James Behnke at the Pillsbury headquarters. This meeting involved 11 men, these men controlled America's largest food companies. The reason behind this meeting was that Behnke had grown very concern over america's overweight outbreak and how the main contributors to this were these companies. He was hopeful they could find a solution to this by agreeing with these companies to make a change. Months prior to meeting with these 11 companies Behnke who has a doctoral degree in food science had a conversed with a group of food-science experts (472) something that was brought up was the fact that some of these processed food had gone too far to make the consumer more hungry as well as their way of marketing their products to the public.     The book “Salt Sugar Fat” by Michael Moss talks about the realizations of the industry. He proves his point that “It’s not like there’s a smoking gun. The gun is right there. It is not hidden.” This meaning everyone already knows the dangers of the industry but yet act like they were blind sighted from the start. Moss stated how the industry markets toward “heavy users” meaning repeating customers who can’t get enough. The industry will use their money towards marketing these users instead of neew ones because they have found this to be more effective. He is credited with discovering how the desire to eat is controlled by the amount of glucose in the blood and by the brain 's hypothalamus, both of which in turn are greatly influenced by sugar."     I reexamined the foods i've been consuming and became astounded. Looking at something as classic as bread, a food that used to contain only a few ingredients, now contains dozens. The effects of the industrialization are all around us, especially in our food. I was unaware that products that make health claims aren't exactly healthy and was surprised to find all of the tricks and loopholes the FDA allows. The rules regarding wording are ambiguous, thus making the health claims on foods almost frivolous. This book examined the diet fads of the past in America such as when margarine was considered to be healthier than butter. I’ve learned that we come up with a new diet plan and find “stunning” data that will better our health all the time, but our health has yet to make a drastic improvement. While we continue to consume the Western Diet, we look for ways to outsmart it rather than do the obvious thing and move away from it. Ultimately, I came away from the book with far more knowledge then when I entered. The book offered great incite into the food industry and how it all works. I am glad I read this book and will definitely implement some lessons into my life.…

    Understanding basic principles of nutrition is essential for the food industry because it gives them the required knowledge to alter the processing of foods without actually making a significant change to the overall healthiness of the food. Pollan states, “For the industry, it’s obviously preferable to have a scientific rationale for further processing foods – whether by lowering the fat or carbs or by boosting omega-3s or fortifying them with antioxidants and probiotics – than to entertain seriously the proposition that processed foods of any kind are a big part of the problem.” Pollan is showing that the food industry will do whatever it takes to promote their products, rather than actually fixing the problem and creating a healthier menu.
