Taco Salsa Chicken

Ingredients:
• 1 jar Mexican salsa
• 1 package chicken thighs
• 1 pouch taco seasoning

Directions:
1. In a pressure cooker, add chicken thighs and sprinkle ½ of the taco seasoning.
2. Toss to coat the Mexican salsa and chicken.
3. Set electric cooker timer to 10 minutes; push button to start cooking.
4. One the chicken is tender, remove and shred in a bowl.
5. Return the chicken and add the remaining taco seasoning.
6. Continue heating for 10 minutes before removing from cooker.
7. Serve the chicken on a plate alongside tortillas or steamed yellow corn and Caesar salad. Touch of Thai Wings and Satay Sauce

Ingredients:
• 3 lbs. chicken wings and thighs
• 1 bottle peanut sauce (satay sauce)
• 4 lime wedges (for garnishing)

• 6 slices bread
• 6 lettuce leaves
• 1 sliced avocado

Directions:
1. Use a large bowl and combine all ingredients except the sesame oil.
2. Place the sesame oil and the patties in a pan; cook in a slow cooker for 11 minutes on high heat.
3. Once the turkey burger is cooked, serve with zucchinis and grated cheese. Beef, Butternut Squash and Kale Stew

Ingredients:
• 2 lb. of 1″ cubed stew beef
• 4 cups beef stock
• 2 tbsp. cooking oil or bacon fat
• 4 minced garlic cloves
• 1 roughly chopped onion
• 1 1/2 tbsp. minced fresh sage
• 1 small cubed butternut squash
• 1/2 tsp. paprika (smoked)
• 16 oz. chopped frozen kale
• Salt and Pepper

Directions:
1. In a pressure cooker, cook stew beef meat and butternut squash for 20 minutes; release steam when done.
2. In a pot, add 1 tbsp. bacon of fat, smoked paprika, sage, salt, garlic, pepper and onions.
